Cependant, la taille d&rsquo;\u0153uf id\u00e9ale varie consid\u00e9rablement d\u2019un pays \u00e0 l\u2019autre. Les pr\u00e9f\u00e9rences locales jouent un r\u00f4le d\u00e9terminant. Dans certains march\u00e9s, la taille influence directement le prix, ce qui affecte les d\u00e9cisions d\u2019achat en fonction du budget des consommateurs.<\/p>\n\n\n\n<p>La rentabilit\u00e9 de la production d\u2019\u0153ufs repose en grande partie sur la capacit\u00e9 du lot de pondeuses \u00e0 produire un maximum d\u2019\u0153ufs de premi\u00e8re qualit\u00e9, en respectant les exigences du march\u00e9, notamment en termes de taille.<\/p>\n\n\n\n<p>Les producteurs choisissent g\u00e9n\u00e9ralement la souche de leurs pondeuses selon leurs objectifs de production, en tenant compte du potentiel g\u00e9n\u00e9tique de chaque lign\u00e9e notamment le poids d\u2019\u0153uf. Cela se traduit par un d\u00e9veloppement sup\u00e9rieur du syst\u00e8me reproducteur (ovaires et oviducte), permettant la production de jaunes plus volumineux et donc d\u2019\u0153ufs plus gros.De plus, les poulettes plus lourdes disposent de plus grandes r\u00e9serves de graisses et de muscles (E. Lacin et al., 2008 ; Muir et al., 2023 ; Jian Lu et al., 2025), leur fournissant l\u2019\u00e9nergie et les nutriments n\u00e9cessaires \u00e0 la production d\u2019\u0153ufs jusqu\u2019\u00e0 au moins 33 semaines d\u2019\u00e2ge.<\/p>\n\n\n\n<p>Dans deux \u00e9tudes men\u00e9es par A. Enfin, une densit\u00e9 d\u2019animaux trop \u00e9lev\u00e9e peut engendrer du stress, de la comp\u00e9tition alimentaire, et en cons\u00e9quence augmenter la proportion de petits \u0153ufs.<\/p>\n\n\n\n<p>Le programme lumineux influence fortement la croissance des poulettes et leurs performances. Plus la dur\u00e9e de lumi\u00e8re est longue, plus la consommation alimentaire augmente, favorisant le d\u00e9veloppement corporel et des \u0153ufs plus gros.
